What Is Fleur de Sel?
Fleur de sel is a layer of salt crystals that floats on the surface of a salt pan, forming only for a brief moment when nature is perfect — abundant sun and a gentle breeze. Salt farmers must skim it by hand with great care, before the delicate crystals sink and dissolve back into the water.
